Maui Chicken!

One of the meals we had at our reception was Maui Chicken. We wanted some dishes that reminded us of Maui. Chicken and pineapple did that!! I looked online and combined a few different recipes and removed a lot of the ingredients to simplify it. Here is what we came up.

You will need! 

1 tablespoon EVOO

5 boneless skinless chicken breasts (cut into 1-inch cubes)
Garlic Powder
1 cup chicken broth
1/2 of a 20 ounce can pineapple chunks in juice, undrained
2 tablespoons brown sugar
2 tablespoons soy sauce
1 teaspoon onion powder
Salt
Pepper
 
Directions:
- Heat a large sauce pan over medium heat. Add olive oil.
- Cook chicken in olive until browned. Add pepper, salt, and garlic powder.
- Add remaining ingredients and stir well. Bring to boil.
- Reduce heat to med-low.
- Serve immediately over rice!
